Beet and Goat Cheese Salad

Heart-heathy and Anti-oxidant Rich!

Written by Gayle

Beets are one of those root vegetables that are absolutely packed with nutrition.  Low in calories, fat, and zero cholesterol.  B-3, B-5, B-6, iron, manganese, iron, copper, magnesium, potassium–all argue for including beets in your healthy lifestyle.  They have a terrific smooth taste on their own, but added to salads with the snappy contrast with vinegars and cheeses they are just plain delectable!  This beet salad is so easy to whip up!
