Drum Roll! Recipe Challenge Winner #3

This recipe, submitted by Kirsten Kent, is our third winner! No reason to make that sickly sweet yam-and-marshmallow dish this year! (I know it's late for Thanksgiving, but yams are great any time during the year!) Give this one a try!
Ingredients
5 organic yams, baked, peeled and sliced
5 organic apples, cored, peeled, and sliced thin (I used Jazz apples, but any firm apple will be great!)
3 TBSP cornstarch
1/2 cup organic raw sugar
1/8 tsp salt
2 cups water
2 tsp lemon juice
4 TBSP butter

Directions
Wash and bake the yams (375 degrees for 1 hour). Cool, peel, and then slice about 1/2" thick Layer in a 9 x 13 pan
Cook the cornstarch, sugar, salt, water, lemon juice, and butter in a saucepan until thick, stirring constantly. Remove from the heat and set aside
Peel, core, and slice the apples, then layer them on top of the yams. Arrange the apples into an appealing pattern on top.
Pour and spread the sauce over the yams and apples.
Bake at 350 degrees for 50 minutes. Allow to cool slightly.
