Irish Soda bread is an easy recipe to get you in a lucky Irish mood! I have adapted several recipes to make this one more healthy and absolutely delicious!
Ingredients
2 cups Organic Whole Wheat Pastry Flour
3 TBSP ground flaxseed meal
2 TBSP Date Sugar
1 tsp baking powder
1/2 tsp aluminum-free baking soda
1/2 tsp sea salt
2 TBSP shredded organic orange peel
3 TBSP Organic Coconut Oil
1/3 cup Organic Currants (or raisins)
1/3 cup Organic Milk or Organic Almond Milk
1/4 cup Organic Greek Yogurt (or Soy yogurt)
1 Organic egg (or egg whites or substitute)
3 TBSP ground flaxseed meal
2 TBSP Date Sugar
1 tsp baking powder
1/2 tsp aluminum-free baking soda
1/2 tsp sea salt
2 TBSP shredded organic orange peel
3 TBSP Organic Coconut Oil
1/3 cup Organic Currants (or raisins)
1/3 cup Organic Milk or Organic Almond Milk
1/4 cup Organic Greek Yogurt (or Soy yogurt)
1 Organic egg (or egg whites or substitute)
Directions
Preheat the oven to 375 degrees.
Put the currants or raisins in a small bowl and add about 2 TBSP of hot water. Allow to stand so the currants plump up a bit.
In a large mixing bowl, stir together the flour, ground flaxseeds, sugar, baking powder, baking soda, salt and orange peel.
Drop the coconut oil onto the flour mixture, and with a pastry mixer or two knives, cut it into the flour until it resembles coarse crumbs.
Drain the currants and stir them into the flour mixture. Make a well in the center of the mixture.
In a small bowl, mix the milk, yogurt and egg together with a fork. Add the liquid all at once to the flour mixture and stir just until moistened.
On a floured surface, knead the dough gently for about 5-6 times and then form a round loaf. It will be soft.
Place the loaf on a greased baking sheet. Slash the dough with a knife in an X.
Bake 30-35 minutes, until golden.
Cut into wedges and serve warm for breakfast, as an accompaniment to herbal tea, or with a warm soup or stew.
