I am just coming out of my Christmas coma (yes, I cleaned up the clutter today!) and realized that I need to start thinking about New Year's celebrations. What am I going to make?
Appetizers are one of my favorite things. Sweet or savory, crunchy or soft--there are so many possibilities! I just went to my refrigerator and cupboards this afternoon and pulled out a little of this and some of that, and came up with some fun appetizers that you could make for your next party. New Year's Eve is coming up, and any of these would be fun to bring along!
Ingredients
Cucumber Based:
Thick peeled cucumber slices, centers hollowed slightly
Plain hummus
Cherry tomatoes, halved
Kalamata olives
Thin cucumber slices (5-6 inches long) for veggie sushi rolls
Matchstick carrots, green onion, peppers, jicama, or asparagus
Tomato Based:
Organic cherry tomatoes, halved
Fresh mozzarella or feta cheese
Fresh basil leaves
Organic olive oil and balsamic vinegar
Lettuce Based:
Organic Romaine or endive leaves
Combinations such as: mango + feta, gorgonzola + blueberries, hummus + dried cranberries
Medjool date halves, filled with gorgonzola
Thin pear slices + gorgonzola + baby spinach, skewered
Mango + arugula + prosciutto, rolled

Directions
Cucumber bites: Hollow out the center of thick cucumber slices slightly. Fill with hummus, top with half a cherry tomato and a kalamata olive.
Cucumber veggie sushi rolls: Spread hummus or cream cheese along a thin cucumber slice. Add matchstick carrots and green onion. Roll up and skewer with a toothpick.
Tomato bites: Halve cherry tomatoes. Top with fresh mozzarella or feta, a basil leaf, and a drizzle of olive oil and balsamic vinegar. Or scoop out some of the inside and fill with hummus and half a kalamata olive.
Lettuce cups: Fill small Romaine or endive leaves with your choice of combinations. Line them up on a plate for a beautiful presentation.
