Heirloom Apple Empanadas

Flaky, buttery hand pies filled with heirloom apples cooked down with brown sugar, cinnamon, and a touch of nutmeg. A sprinkle of turbinado sugar bakes into a crackly golden top, making these a sweet fall bake to share at gatherings or enjoy with an afternoon cup of coffee.
Ingredients
Dough
2 1/2 cups organic all-purpose flour
2 tbsp organic granulated sugar
1 tsp salt
1 cup organic unsalted butter, cold and cubed
1 large egg
6 tbsp ice water
Filling
1 tbsp organic unsalted butter
3 cups organic heirloom apples, peeled, cored and diced
1/3 cup organic brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp organic lemon juice
1 tbsp organic cornstarch
1 pinch salt
1 tsp vanilla extract
Egg Wash
1 large egg
1 tbsp water
1 tbsp organic turbinado sugar

1 tbsp organic cornstarch
1 pinch salt

Egg Wash
1 large egg
1 tbsp water
1 tbsp organic turbinado sugar
Directions
In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Beat in the egg, then add the ice water a tablespoon at a time, mixing just until the dough comes together. Divide into two disks, wrap, and refrigerate. In a skillet over medium heat, melt the butter and cook the diced apples until just softened. Stir in the brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, salt, and vanilla. Cook until thickened, then remove from heat and let cool completely. Preheat the oven to 375°F and line a baking sheet with parchment. Roll the dough to 1/8-inch thickness and cut into 5 to 6-inch rounds. Spoon 2 tablespoons of cooled filling onto each round, fold into a half-moon, and crimp the edges with a fork to seal. Whisk the second egg with the water and brush over each empanada. Sprinkle with turbinado sugar and bake until golden brown, 25 to 30 minutes.
