Joy’s Chia Smoothie

Ah… Here it is! What a good lookin’ smoothie!

Before we get too deep into berries and chia seeds, let’s meet the lovely creator of this healthy drink!, chia+smoothie

This is Joy!, chia+smoothie

Joy is Lassen’s Regional Marketing Director. She’s the sweet face behind all our interesting Facebook and Twitter posts. As a former Pilates instructor, Joy lives a very healthy lifestyle that she shares with her husband and two adorable Great Danes, Scout and Hunter (who just became a Certified Therapy Dog! Congrats Hunter!)


Once upon a few days ago, Joy and I found ourselves talking about our favorite super-foods when Chia Seeds came up.

Why do we like Chia Seeds?, chia+smoothie

Well aside from the fact that when they are left to soak in a liquid for a small amount of time, they take on an amazing gooey consistency (reminiscent of Boba or tapioca pearls found in certain Taiwanese tea-based drinks), but they also contain a handful of wonderful health benefits including Omega 3 fatty acids, antioxidants, minerals and fiber! They have also been known to aid in weight loss due to their ability to satiate hunger cravings in between meals!

“I have a really good chia smoothie that I make in the mornings!” said Joy with a smile.
“Care to share?”

And share she did!
Now from Joy’s kitchen, Lassens is proud to present…

Joy’s Chia, Berry & Spinach Smoothie, chia+smoothie, chia+smoothie
 You’ll Need:
  • Handful of organic spinach
  • 1/2 cup of organic frozen strawberries
  • 1/2 cup of organic frozen blackberries (could use raspberries, blueberries)
  • 1 frozen organic banana
  • 1 tbsp of chia seeds
  • Approximately 2 1/2 cups of almond milk (or soy milk)


Place spinach in first, then chia seeds, then all other ingredients.
Pulse to desired thickness. For a thicker smoothie, use less almond milk. For a thinner consistency, use more almond milk.
Makes 2/3 servings, chia+smoothie, chia+smoothie, chia+smoothie

This smoothie packs a health-lovin’ punch! It acts as a great breakfast or a wonderful snack or meal replacement any time of day!

Raw & Vegan Strawberry Cheesecake

A decadent dessert that’s good for you? Whaaaa…?

We’ve come to expect nothing but the best from this gal!
And with the spring season so close at hand, this creation couldn’t have happened soon enough!
Lo and behold… 

Raw & Vegan Strawberry Cheesecake

Raw+Vegan, Strawberry+Cheesecake
 You’ll Need:
  • 1 cup raw pecans
  • 1/2 cup dried cranberries
  • 1/4 cup organic dates
  • pinch of Himalayan pink salt
Filling (the pink layer)
2 cups raw cashews (soaked overnight in water)
4 tsp raw agave
1 1/2 tsp coconut oil
1/2 tsp organic vanilla extract
3 lemons (juiced)
1 1/2 cup packed sliced strawberries

1 cup cashews (soaked overnight in water)
1/4 cup water
2 Tbs raw agave
1 tsp organic vanilla extract
1/4 cup organic coconut oil

  • Soak cranberries & cashews (separately) for 30 minutes (until cashews are soft) and drain.
  • Place all ingredients for crust in processor or blender -blend well.
  • Place in separate bowl and refrigerate.
  • Repeat process for filling and topping (rinse and towel dry food processor in between blendings).
  • Line crust evenly into a pie pan, pressing down edges to make a flat surface.
  • Pour filling over crust (repeat smoothing process) followed by topping.
  • Put in freezer until hard and serve.
  • For extra flavor and presentation, top with thinly sliced strawberries and fresh mint!

The Organic Protein Shake of Dreams


This is a true story, and if I may add, also a love story.



One morning I was flying over Antarctica with Morgan Freeman
trying to snatch up miniature rainbow colored penguins in my giant hands,  
when suddenly –
Dee-deetle-deee! Dee-deetle-Dee!
(This is the sound of my accursed alarm clock)


With a unnecessary huff, I pulled myself onto my feet and got ready for work.

With 20 minutes before I have to run out the door, I popped my head into the fridge for a glimpse of what may soon become my breakfast. It seems that all of that subzero soaring and chit chatting with Mr. Freeman had really given me an appetite.
Eggs, goat cheese, organic spinach and organic free range chicken sausage? Sounds like an amazing omelet to me, but I’m sort of strapped for time so I reach for the cold sweet vanilla bean Orgain, a ready-to-drink organic protein shake.
With not enough time to make a scrumptious omelet, but more than enough time to drink down this Orgain, I decide to improvise.

The Organic Protein Shake of Dreams

 You’ll Need:
  • 1 Vanilla Orgain
  • 6 organic frozen strawberries
  • ½ an organic banana
  • 1 ½ Tb organic ground flax seed


Add all ingredients into a high powered blender and, well, blend, for Pete’s sake!
Pulse the blades at the end to make sure that the strawberries are fully chopped.




Without the strawberries, banana and flax, Orgain is already a great meal-on-the-go.

Before I delve deep into the sweet, and tangy magic that occurs when strawberries, rhubarb and other select ingredients collide, let me start out by giving you a little background on who we (Lassens Natural Foods Market ) are, and what this whole recipe swap is all about.
Hilmar and Oda Lassen opened the doors to Lassens in 1971 after coming to America from Denmark at the end of WWII. During the German occupation of Denmark, the couple risked their lives as part of the Danish Underground while simultaneously running a dairy store. They had always put their emphasis on the quality of life and knew that good food fuels a good life. They made it their goal to make good, organic, wholesome food available to their new community in Camarillo. Good food like organic raw milk, organic nuts and grains and fresh, organically grown local produce. As the minute hand spins, the hour hand twirls and the calendars jump on and off the walls like trained pups, new trends and findings in the health industry are constantly springing up and Lassens has always been able to rise to the challenge.

Real Foods Real Recipes is a way for all of us; the knowledgeable and the newbie, the master chef and the micro-waver, to share and explore the different ways to enjoy these good foods. Every day customers are purchasing products like coconut oil and organic cacao, but what happens at home once you put them together? That’s what I want to know!

And who am I? I’m a Lassen’s team member who loves to eat real food. I started as a cashier in December of 2008 and I quickly fell in love with this new world that I had unknowingly sailed into. My thirst for knowledge led me into a position in supplements which is where I resided for the next two years. From this angle, I not only learned a lifetime’s worth of information about how to live a healthy lifestyle but also I began to look at food in a new way. Yes, Mom was not lying when she told me that vegetables were good for you… but what she failed to mention (or maybe just failed to demonstrate) is how amazing they could taste! I didn’t know fish didn’t HAVE to taste like the ocean and who knew that it was a natural source of essential fatty acids? I’ve since been promoted to a creative position whereI’ve been able to put my talents to use (along with my love to cook and my need to cook more) with the creation of this here blog! 

But enough about me. I’ve offered you sweet promises of cobbler, and I do not disappoint.
Be forewarned, once you take a bite you may turn into a different person. A person who lacks the rational and restraint of your former self. A person who does not know nor care how to put down a fork.
This is the Dr. Jekyll and Mr. Hyde of Cobbler and it is my very favorite desert.

I give you … Strawberry Rhubarb Crunch.

Rhubarb+Crisp, Strawberry+Rhubarb+Cobbler, Rhubarb+cobbler

You’ll Need:
-1 cup sugar (I used Wholesome Sweeteners organic sugar)
-3 Tb flour (try Arrowhead Mills organic pastry flour)
-3 cups sliced organic strawberries
-3 cups diced organic rhubarb 

-1/2 cups flour
(I did ¼ cup Arrowhead Mills organic pastry flour and ¼ cup Bob’s Red Mill organic coconut flour. The benefits of the coconut are seemingly endless. Plus it just smells and tastes amazing)
-1 cup packed brown sugar (try Wholesome Sweeteners organic dark brown sugar)
-1 cup butter (I went a vegan route and used Earth Balance vegan margarine*)
-1 cup rolled oats (try Bob’s Red Mill old fashioned rolled oats. )
Preheat oven to 375 degrees. In a large bowl, sugar, 3Tb flour, strawberries and
rhubarb. Place in a 9 x 13 baking dish. Mix 1 1/2 cup flour, brown sugar, butter and oats until crumbly. Sprinkle brown sugar mixture on top of the rhubarb and strawberry mixture and bake for 45 minutes until topping is lightly browned!
