Late Summer Bounty

Apples–at least when they are crisp–are one of my favorite snacks.  And I like to have them in all sorts of forms–muffins, pies, crisps, salads.  These little beauties are a great way to have apples and chips at the same time!

Dried Apple Chips

You’ll need only two ingredients–organic apples and cinnamon.  Almost any apples will do–whatever variety that you love.  And if you’d like them plain, skip the cinnamon!  Preheat your oven to 275 degrees.

The hardest step is to core the apples.  I have an old-fashioned vegetable peeler that works great, but a straight, narrow paring knife works too.  A serrated knife is a little hard to control through the turn in this project.

Then slice the apples thin and place in a single layer on a baking sheet.  You can line it with parchment paper or silpat, if desired.  Three apples filled my largest baking sheet

Place in a pre-heated oven, and leave for one hour.  Then flip them over and dry for a second hour.  You’ll want to check them periodically to be sure that they are not too dried out.

These are a great snack to toss in school or work lunches!
